Hi I’m Hannah Noonan!
After completing a degree in business in 2002 and working in the corporate and non-profit world for many years (mainly in dispute resolution), in 2015 I began a new career path and followed my dreams! I commenced a Bachelor of Health Science (Nutritional and Dietetic Medicine) degree and in a couple of years I’ll be a qualified nutritionist. I then plan on spending my days helping people find the right way of eating for their body that will help them achieve their health goals.
Over the past few years I have struggled with digestive issues (food intolerances and IBS symptoms) which required a constant focus on the ingredients in the meals I ate. I have managed to find a way of eating that allows me to have a symptom free life (for most the of time!) but every human body is different and what food works well for one, may not work well for another. We also choose to eat, or choose not to eat, different food for different reasons. In our house I have cooked to cater for different dietary needs and choices, including gluten free, grain free, sugar free, dairy free, paleo, vegetarian, vegan, low carb, no seafood and low FODMAP. Phew! Yes, I have had a lot of practice altering meals to suit different requirements that regularly change.
This practice lead me to this project. What could you do with 100 days of making? That is the question asked by The 100 Day Project.
The first thing that came to mind was pancakes. Nutritious ones. That cater for different dietary needs and choices. So every day for 100 days I tested and created healthy pancakes and you’ll find the completed recipes on this blog!
