Vegan Teff Pancakes

Teff again, yay! Love it. If you haven’t tried it, give it a shot, it has such a different texture and flavour to other gluten free grains/flour.


15 mins total (prep and cooking time), serves 2 (about 10 mini pancakes)


1 banana

1/2 cup blueberries

1/2 cup almond milk

1/2 cup teff

1/4 teaspoon apple cider vinegar

1/4 teaspoon baking soda


  1. Pre-heat a non-stick pan on low to medium heat
  2. Mash the blueberries and banana in a pouring bowl/jug with a fork
  3. Add the almond milk and teff and mix until combined
  4. Add the apple cider vinegar and baking soda and mix
  5. Pour or spoon out piklet sized amounts into the pan and turn once you see that it has cooked through a little
